Melted Snowman Toffee
Marshmallows, pretzels, chocolate and toffee, what a way to start the 12 Days of Christmas Treats. Our first treat is a quick candy using saltines and melted chocolate. You can vary what you want to chop to add to the top : maraschino cherries, coconut or chipped slivers of candy cane make this a wonderful treat to give away in a gift box, if you can keep from eating them all! You will find that this is so yummy and quick to make, that you will end up making two batches just as easily as you can make one.

  1. Preheat oven to 350F. On a cookie sheet, line with wax paper or foil to lift toffee out when completed. Over the wax or foil, line up saltine crackers, you can add broken pieces on the side to fill in areas. In a saucepan over medium heat, add the butter. Cook until melted. Add brown sugar bringing mixture to a boil, constantly stirring to keep from burning. Pour mixture over saltine crackers and use a spatula if desired to spread over crackers in an even layer.
  2. Bake for 7-8 minutes until the edges bubble slightly. Remove cookie sheet from oven, carefully pouring chocolate chips over the toffee. Using a spatula spread the melting chips to cover as much of the toffee as possible. Do not worry if they dont melt right away, you can pop it back in the oven for a minute or two to let it melt some more. Let it rest in your cooling oven for about 10 minutes. Once you pull out the cookie sheet, using your spatula again you can spread the melted chocolate some more. Sprinkle the marshmallows and pretzel pieces randomly, these are the parts of your melted snowman. Pop the cookie sheet into your freezer for 45 minutes to 2 hours until the chocolate has reset. With a sharp knife you can cut into squares. We usually end up breaking off chunks because this never lasts more than 1 day at home!
