Shortbread
Buttery, crisp, wonderful with morning coffee or a midnight milk, Shortbread is the most humble treat of the cookie world. Little is needed to make them, just three ingredients that are probably in your cupboard now. They are a cookie that grandmas love, and sometimes around the holidays, its nice to have shortbread with your tea and reminisce.

  1. Preheat oven to 325 F. Line 2 cookie sheets with parchment paper or a light coating of a baking spray. Set aside.
  2. Mix butter with powdered sugar, until creamy. Slowly sift in flour, continuously scraping down the sides to incorporate all the ingredients.
  3. Roll out dough to about an inch thick and cut into circles or rectangles. Place on cookie sheets at least 2 inches apart. Prick dough with a fork to make traditional shortbread design.
  4. Bake 12-15 minutes or until slightly golden. Do not let them brown. Remove from oven and cool for 10 minutes.
