Peppermint Fudge
The first Friday of December calls for fudge! This little recipe is quick and only has three ingredients making it a cinch to make in advance and have on hand for visitors. If you want to fancy up a presentation, visit the dollar store for holiday doilies, paper or foil printed snack cups and boxes that you can line with parchment paper. Enjoy!

  1. Butter a square pan and line bottom with wax or parchment paper for easy removal. Set to the side. Using a microwave safe bowl, combine the chocolate chips and the condensed milk. Heat on high for 1 minute. Let it sit for 30 seconds then stir to blend together. If it still hasn’t melted completely, add in 30 second intervals of microwave time. After each heating, allow for it to cool for about 30 seconds and stirring until the consistency of the fudge is smooth.
  2. Stir in peppermint extract and mix thoroughly to insure that the extract is distributed well throughout. Pour fudge into the prepared pan and allow it to cool in the refrigerator for 1 hour before cutting into squares. Store in an airtight container.
